How to use powders for confectionery?

When working with sublimation powder, it is important to follow several rules that will help not only to use sublimation product properly, but also to avoid problems.

Firstly, the sublimation container must always be hermetically sealed. The freeze-dried powder contains less than 4% of water, so it very quickly collects moisture from the environment. The most dangerous seasons for sublimates due to high humidity are summer and autumn.

Secondly, the sweeter the source berry or fruit, the more the powder is prone to clumping. If it has hardened, do not panic, but break it into pieces and send it to the coffee grinder.

And thirdly, the aroma and richness of the finished dish depend directly on the amount of powder added. Do not pour out all the powder at once, but add in small portions, each time carefully mixing the natural dye with the mass.
